Billecart Salmon Brut Cuvee Louis 2007 is a tribute to Elisabeth Salmon’s brother, who was very involved in the creation of champagnes since the very beginning. It’s a Blanc de Blancs champagne, sourced from the best plots of the Côte des Blancs (three Grands Crus : Chouilly, Mesnil-sur-Oger and Cramant). This superb 2007 100% Chardonnay champagne has been vinified in oak cask for 50%. It is full of minerality and purity.
Following 10 years of cellar aging, the nose unveils an aromatic profile with a chalky character of a great purity. The palate develops a great refreshing balance and the final is of a marvelous length. This champagne can be kept for 10 years. Its extremely fine structure is perfect with dishes such as sweetbread, or a creamy seafood risotto. Champagne Billecart-Salmon was founded with the marriage of Nicolas-François Billecart and Elisabeth Salmon in 1818. Situated in the village of Mareuil-sur-Aÿ, the House were forced to sell most of their vineyards during the difficulties of the early 20th century and today their 15-hecatres cover a small proportion of their production needs. To finance their growth, 45% of their shares were sold to a local investor whose vast resources aid greatly in the sourcing of grapes. Still a family-run organisation, sixth generation members of the founding family François and Antoine Roland-Billecart oversee business, whilst Chef de Cave François Domi has been at the winemaking helm for nearly thirty years.
Billecart-Salmon’s pure-Chardonnay vintage is a blend of Grand Cru vineyards of the Côte des Blancs. Cramant and Chouilly for its finess, Avize for its power and Mesnil-sur-Oger for its structure and longevity. Named in honour of the brother of Elisabeth Salmon, who founded the house in 1818 with her husband Nicolas Francois.
